Honey Chili Salmon
INGREDIENTS
4 Salmon Fillets
1/2 Cup lime juice
2 Tbsp olive oil
4 minced garlic cloves
1 tsp Red Chilli Flakes
2 tsp Dried Parsley
1 tsp Ground Cumin
1 tsp salt
1/2 tsp black pepper
2 Tbsp honey
1 red bell pepper (chopped)
1 green bell pepper (chopped)
1 yellow bell pepper (chopped)
1 onion (wedged)
4 Garlic Cloves Whole
1 Shallot (diced)
DIRECTIONS:
Preheat oven to grill/broil settings on high heat.
Cover a baking sheet with parchment paper and spray with cooking oil spray; set aside.
In a medium size bowl combine the lime juice, dried parsley, olive oil, minced garlic, chili flakes, cumin, salt and pepper together to combine.
Add the honey and whisk again until the honey runs smooth through the rest of the ingredients.
Take the salmon fillets and place them skin side up in the mixture and then place them on the baking sheet skin side down.
Once you have done all the salmon, take the peppers and onions and put toss them in the reminder of the mixture covering them lightly.
Place the salmon in the oven and cook for about 10 minutes or until the peppers start to colour. Yoiu may want to cook for less or more time depending on how you like your salmon done.

*During the broil time, I used the opportunity to make a garlic asparagus spaghetti to add a little green to the plate
