Pumpkin Curry Pork Chops


INGREDIENTS

6-8 Bone-In Pork Chops

1 1/2 Cup Pumpkin Puree

2/3 Cup Water

2 Small Sweet Onion (diced)

3 Tbsp Olive Oil (split)

1 Tsp Paprika (smoked)

2 Tbsp Curry Powder

Salt & Pepper to Taste


DIRECTIONS

Preheat oven to 350 degrees F.


In a frying pan, add the diced onion and 1 tbsp of olive oil. Cook for 10 - 15 min .

In a second sauce pan boil the pumpkin. Once the pumpkin soft place the pumpkin, onions and seasoning into the blender and mix until smooth.


Transfer back to the pan that you cooked the onions in and bring to a simmer.


To prepare the pork, pat dry both sides of it and rub completely with olive oil and season both sides with salt and pepper.


Place the pork chops in a heated frying pan and cook both sides for 2-4 minutes. Once the internal temperature reaches 165 pull off the stove. Remove the pork from the pan and wipe it dry.


Add the water and pumpkin puree to the simmer from 3 - 5 minutes. Pour the pumpkin mixture of the pork chops and serve.
