Sweet Honey Meatballs
INGREDIENTS
1 1/2 lbs Pork
1 Large Egg (beaten)
1/4 cup Bread Crumbs
2 tbsp cilantro (fresh & diced)
6 Garlic Cloves (minced)
1/2 Red Pepper (finely diced)
1 Small Sweet Onion (finely diced)
1/4 Shallot Bulb (finely diced)
1 tsp Chili Garlic Sauce
2 tbsp Honey
1 tbsp Low Sodium Soy Sauce
2 tsp Sriracha
1 tsp salt & pepper
DIRECTIONS
Pre heat the oven to 350°F (175°C)
Pre-cook (or partial cook) the peppers, shallots onions and garlic before starting.
In a large bowl combine all the ingredients mixing them together thoroughly.
Once everything is mixed, take a large tablespoon amount of each and roll them into ball shapes
Place the meatballs on a pre-sprayed sheet of aluminium foil and place in the oven for 15 min.
Rotate the meatballs and place back in the oven for another 5-10 minutes or until the pork is 145° and fully cooked.
Let cool and serve!
This time I chose to serve the meatballs over a yellow pepper and cauliflower rice medley with a side of sauteed mushrooms topped with a sunny side up egg, but the world is your oyster so feel free to try this protein portion out with any veggie side and enjoy!
